A slightly hotter version to the traditional Chimi, with a few chillies to give it more warmth and flavour. This sauce is still considered "mild" in spiciness standards, so best recommended for those who like just a bit hot.
Some say Chimichurri (or "Chimi" for the friends) comes from Basque’s tximitxurri, interpreted as "a mix of several things in no special order". Others claim the name comes from "Jimmy’s curry", Jimmy, being an Englishman who joined the fight for Argentine Independence. The name then morphed locally into "Chimichurri".
